Quinoa Pizza Bites

I absolutely love quinoa, which is the reason I tried this recipe. Aaron enjoyed them as well, however, next time I am going to make patties and cook on a cookie sheet instead of a muffin tin; they were hard to get out of the muffin tin without destroying their shape. We will definitely be making these again, and next time we're going to experiment with 'toppings.'

One serving size (1/2 cup, uncooked) has:

  • 14g protein, includes a balanced set of essential amino acids.
  • 6g of fiber
  • 35% daily recommended value of iron
  • 46% daily recommended value of folate

Quinoa Pizza Bites
Adapted from So Very Blessed

2 cups cooked quinoa
2 large eggs
1 cup chopped onion
1 cup shredded mozzarella cheese
2 tsp minced garlic
1/2 cup fresh basil, chopped
1 cup chopped pepperoni slices (not a big fan of pepperoni, but Aaron wanted meat)
1/2 tsp seasoning salt
1 tsp paprika
1 tsp dried crushed oregano
pizza sauce for dipping
  1. Preheat oven to 350 degrees.
  2. Mix together all ingredients, except pizza sauce, in a medium mixing bowl.
  3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact. 
  4. Bake for 15-20 minutes. Makes 40 bites.
