Multi-grain Pancake Mix


Being a full-time student and working 25 hours a week leaves little time for food preparation, so I have been forced to adapt and come up with quick and easy alternatives to our all-time favorites.
Pancakes from scratch is one of our favorite breakfasts, but the preparation can take my whole morning! I found a pancake mix recipe online and adapted it to fit our dietary preferences ;) We both love the taste and texture of these pancakes, and we both love how easy they are to prepare!

Makes about 4 cups of mix.
3 cups whole wheat flour
1/2 cup ground flax
1/2 cup oat flour
2 Tbsp sugar*
2 tsp salt
2 tsp Baking Powder
1 tsp Baking Soda

Combine all ingredients in a large bowl. Using a sturdy wire whisk, mix ingredients together thoroughly.
Using a funnel, scoop mix into jars and top with a lid. Label and store in the refrigerator or freezer until ready to use.

To use:
Mix together:
1 cup pancake mix
1 cup buttermilk OR 1 cup milk with 1 teaspoon white vinegar
1 tablespoon olive oil
1 egg

Combine well and ladle on to a hot griddle. Flip pancakes when bubbles start to appear.

Yields approximately seven 5-inch round pancakes.

  1. Do you have any other recipes for mixes? I've seen a few different ones for cakes, breads, etc., but some seem like you have to add in half the ingredients after anyways, so they're not really that useful, or they include shortening in the mix, which seems a little iffy to me. I'd love to have a basic bread mix that I can dress up into a few variations, a chocolate cake mix, a brownie mix, and maybe a cookie mix starter that can be made into a couple different recipes. I think that should be your next assignment. :)

    1. I have a cornbread mix from Pioneer Woman, but that's it :) I will definitely work on it! It's hard to get a healthy just-add-water recipe since most have artificial ingredients that, like you said, are "iffy." But I will definitely work on it!
