Chicken Salad with Apricots and Almonds



When I was young and my family lived on a farm we had a very bodacious peach-cot tree. What is a peach-cot? It's a mix between an apricot and a peach. Who knew that trees could be mutts? And that it would taste soooo good!
Anyway, I can't find peach-cots anywhere. But I did find some apricots at the local produce stand and I had to try out this recipe.


First, apricots are healthy for you. Especially pregnant women.
One cup of apricots has:

  • 94% Vitamin A
  • 19% Iron
  • 9 grams of fiber
Not only does this recipe have apricots, it also has roasted chicken which is a rich source of protein, and it has 4 oz of almonds which have:
  • 24 grams of protein
  • 32% calcium
  • 12 gram fiber
  • 20 % iron
  • antioxidants
  • heart-healthy fats!

If I'd had enough chicken I would have doubled the recipe for a few days worth of lunches, it was that good!

You have two options when it comes to this salad:
1. Follow directions according to the recipe and serve over lettuce. Or,
2. Serve as sandwich filling: Use only 1 lb of apricots, slice and mix in with the rest of the salad ingredients.

Chicken Salad with Apricots and Almonds
Serves 4-6

2 lbs fresh apricots, pitted and halved
2 cups cooked roasted chicken or turkey, cold and shredded
3-4 Tbsp mayonnaise or salad dressing (you could also use a combination of Greek yogurt and mayo)
1/2 cup slivered almonds, lightly toasted
1/4 cup chopped green onions
Bibb or romaine lettuce
Salt and pepper to taste

Mix mayo, chicken, salt, and pepper together in bowl until chicken is well coated.
Add green onions and almonds (and sliced apricots, if making sandwich filling).
Serve over sliced apricots and lettuce (or bread).
